I notice several other functions, in addition to the Functions used in the Tutorial, on 2.2 that I'm having difficulty finding Tutorial info as to what they are for and how to use them.

Isn't it "Is ther anybody in there?" from "comfortably numb"...
Anyway, Default cursor is simply an inactive cursor. When selected you can click on the graph and nothing will happen. You select it if you don't want someone clicking on Har-Bal and screwing up your work. By and large it is rarely used.
Zoom In, Zoom Out and pan cursors are for navigating the graph. If you want closer look at the detail in a particular region, grab the Zoom In cursor and click and drag a bounding box around the area of interest. On letting go of the mouse button it will zoom into that area. The pan cursor is like imaging the graph is a sheet of paper that you slide around. Click and drag the mouse and the graph will follow. Zoom out is like Zoom In but in the opposite direction.
As for the Harmonic cursor, try reading these threads:
